Characterized by a very spicy nose with typical vegetal and balsamic varietal notes. It has a balanced structure with good sapidity and acidity. It is worked exclusively in stainless steel to maintain its fresh characteristics. Ideal for pairing with game and mushrooms.
Vinification takes place in stainless steel using selected yeasts. The fermentation temperature is around 26° C. During the maceration period of about 18 days, frequent punch-downs and delestage are carried out to extract color and aromas. At the end of alcoholic fermentation, the wine is kept in stainless steel where it also undergoes malolactic fermentation; it then ages for one year before bottling. In this case, only stainless steel aging is preferred to preserve the characteristic varietal aroma of this wine.
