Full-bodied, with a rich and intense aromatic profile. The long macerations give it a rich palate and a nose ranging from ripe red fruit to subtle vanilla notes, derived from aging in second-use French oak barriques.
Vinification takes place in stainless steel using selected yeasts. The fermentation temperature is around 26° C. Frequent punch-downs and delestage are carried out throughout the maceration period.
At the end of alcoholic fermentation, the wine is immediately transferred into medium-toast second-use French oak barriques to undergo malolactic fermentation and aging. Frequent batonnage is carried out here.
