Winery


The hand-harvested grapes undergo a pre-fermentation maceration at low temperatures for about 4 hours. They are then gently pressed in a bladder press, kept cool throughout the process with dry ice. Vinification takes place in stainless steel, with fermentation temperature controlled below 20° C, followed by aging on fine lees for the following months. Part of the batch is aged in barriques, where the wine undergoes malolactic fermentation.
