Deep ruby red in color, with an aromatic complexity ranging from sour cherry to forest floor notes. Medium-bodied, balanced, and with the characteristic fixed acidity that makes it perfect with fatty meats. Aged in second- and third-use barriques.
Vinification takes place in stainless steel using selected yeasts. The fermentation temperature is around 26° C. Frequent punch-downs and delestage are carried out throughout the maceration period, which lasts about two weeks. At the end of alcoholic fermentation, the wine is immediately transferred into second- and third-use French oak barriques to undergo malolactic fermentation and aging for about one year.
