This sparkling wine is produced using a long Charmat method. The Ribolla, with its varietal freshness, provides an excellent sparkling base, while the Chardonnay adds body and aromas. The careful selection of grapes and meticulous production are the secrets behind this simple yet outstanding sparkling wine, characterized by its pure fruitiness and varietal expression.

The Ribolla Gialla grapes, harvested slightly underripe to maintain higher acidity, were gently pressed in a bladder press, cooled with carbonic snow. The Chardonnay, on the other hand, was allowed to reach full maturity and also immediately pressed without maceration. Vinification took place in steel tanks, and the sparkling process was done using the Charmat method at a controlled fermentation temperature of 16° C. Aging on fine lees followed for the next five months.
